The position is primarily concerned with front of house activities but interfaces with back of house functions.<\/p>\n<p><strong>Key Responsibility<\/strong><\/p>\n<p><strong>Sales\/Profitability\/Cost Control<\/strong><\/p>\n<ul>\n<li>Achievement of budgeted food sales.<\/li>\n<li>Achievement of budgeted beverage sales.<\/li>\n<li>Achievement of budgeted labor costs.<\/li>\n<li>Achieve maximum profitability and over-all success by controlling costs and quality of service.<\/li>\n<li>Participation and input towards Restaurant Marketing activities.<\/li>\n<li>Control of Banquet china, cutlery, glassware, linen and equipment.<\/li>\n<li>Completion of function delivery sheets in an accurate and timely fashion.<\/li>\n<li>Help in preparation of forecast and actual budget function sheets.<\/li>\n<li>Completion of forecast and actual budget function sheets.<\/li>\n<li>Completion of Function Summary Sheets.<\/li>\n<li>Development and Execution of Marketing and Sales Plans<\/li>\n<\/ul>\n<p><strong>Administration<\/strong><\/p>\n<ul>\n<li>Completion of weekly payroll input.<\/li>\n<li>Completion of weekly schedules. Schedule staff as necessary to ensure adequate and consistent levels of service<\/li>\n<li>To supervise and co-ordinate daily operation of meeting\/banquet set-ups and service.<\/li>\n<li>Completion of Outside Catering Bar Requisitions.<\/li>\n<li>Maintaining Restaurant Bar control policies and completion of necessary forms.<\/li>\n<li>Following of proper purchasing and requisitioning procedures.<\/li>\n<li>Maintain records for inventory, labor cost, food cost etc.<\/li>\n<li>Follow-up each function by completing a Function Critique and submit to the Catering Manager.<\/li>\n<li>Attendance and participation of weekly Restaurant meeting and Department Head meeting.<\/li>\n<li>To assist in menu planning and pricing.<\/li>\n<li>Development and maintenance of all department control procedures.<\/li>\n<li>Development and maintenance of department manual.<\/li>\n<li>Supervision of weekly payroll input.<\/li>\n<li>Supervision of weekly schedules.
